I thought I’d share with you my vegan banana bread recipe. Many of my friends have said they had no idea that it was vegan. Which to me, makes it a great recipe. I did try to make this recipe gluten free, but I haven’t quite got the substitutions right. When I do, I’ll be sure to update this post for those looking for gluten, dairy and egg free banana bread! 

You Will Need
2 Cups Plain Flour
1 1/2 Teaspoons Baking Soda
1 Cup Brown Sugar
1/4 Cup Dairy Free Spread (I use Nuttelex)
4 Medium Bananas, mashed 
1/4 Cup Water
2 Teaspoons Mixed Spice
Optional Extras: Walnuts, Chocolate Chips, Almonds, Pecans

Method
Pre-heat oven to 180degrees celsius and line and grease one 20cm loaf tin.
Whisk together the sugar and nuttelex until light and fluffy.
Add the bananas and water and mix until resonably smooth. Occasionally I do like the banana to be chunky in the bread, so how much you mash your bananas is completely up to you!

Add the dry ingredients and mix together until just combined.
Spoon mixture into the loaf tin and bake for approximately 45 – 55 minutes, until a skewer inserted comes out clean. 

Let cool in the pan, then cut into slices.

Eat as is, heat up in the microwave or even toast and smother with your favourite dairy free spread. Delish!
